Ruby Chocolate Callets – Chef-Line Range

Each year we secure a small batch of Ruby chocolate — a rare and exciting variety of chocolate first unveiled in 2017. Made from specially selected ruby cocoa beans grown in Ecuador, Brazil, and the Ivory Coast, ruby chocolate is known for its naturally pink hue and vibrant, fruity flavour with notes of berries and red fruits.

Celebrated by pastry chefs and chocolate lovers alike, ruby chocolate has quickly earned a reputation as the “fourth” chocolate type alongside dark, milk, and white. Its striking colour and unique taste profile make it perfect for culinary creations — from truffles and ganache to cakes and desserts — or simply enjoyed on its own.

These ruby chocolate callets (small melting pieces) are:

  • Naturally gluten-free

  • Easy to melt, mix, and mould

  • Ideal for restaurants, cafés, and home bakers alike

As part of our Chef-Line range, these callets are repacked from our wholesale supply into smaller quantities — perfect for passionate makers who value quality and creativity in their chocolate. The Chef-Line range isn’t a standard retail product; it’s crafted specifically for the hospitality industry and made available to you online by popular demand.

Return Policy

We want you to be happy with your purchase. If you have any problems with your order, please follow these guidelines: Incorrect or Damaged Items: If you receive an item that is incorrect, damaged, or does not match its description, please contact us within 2 days of receiving your order. We will be happy to send you a replacement or issue a full refund.

Change of Mind: We generally do not accept returns for change of mind.

Temperature Concerns: Chocolate is sensitive to heat. We are not responsible for products damaged during shipping unless you select Express Post with insurance during checkout.

Return Process: To initiate a return, please email us at sales@federationchocolate.com.au with your order details and reason for return. We will provide you with further instructions.

Refunds: If you are entitled to a refund, we will process it within 30 days of receiving your return.

Return Shipping: You are responsible for the cost of returning any items to us. Please ensure they are packaged securely.

These are disgustingly overpriced! I pay $8 for 250gms from a Victorian company

As a small, family-run business based in Tasmania, we take great pride in crafting high-quality chocolate using ethically sourced ingredients. The price you mentioned is actually below our cost of production. While we’re unsure who your supplier is, many factors influence pricing — including the significantly higher freight and operational costs we face here in Tasmania.

We’ve never claimed to be the cheapest — our focus is on quality, authenticity, and supporting both our local community and cacao-growing communities around the world. Every product we offer reflects the care and craftsmanship we pour into our work.

We understand our pricing isn’t for everyone, but we do our best to offer a range of products to suit different budgets — without compromising on quality. As for the ruby buttons, we stock them because many of our customers specifically requested them. Of course, no one is ever obliged to purchase something they don’t want.

We always welcome constructive feedback, especially from those who have experienced our products firsthand. But public comments made without context or direct interaction can be misleading and unfair — not just to us, but to the broader community of small makers who rely on honest engagement.

It’s the first time I have tried this chocolate and it is absolutely beautiful. I mixed it with my Italian buttercream and you can still taste the flavour through the buttercream.
