Have you ever thought about how much effort goes into making premium chocolate from bean to bar?

When we started making our chocolate every bean was processed by hand. After roasting the cacao we would remove the husks from the beans with our fingers. It was a time consuming job, but meant that every bit of husk was removed.

We would never be able to process the amount of cacao we need these days with this method. So now we have a couple of hand made tools that helps this process, but with our ever growing chocolate making we will need to update these soon so we can process more direct trade cacao.
